New York-style pizza originated in New York City in the early 1900s. To create a pizza its yeasted dough is tossed into the air, then caught on two fists and stretched into a circle. The dough is then covered in whole milk mozzarella, crushed tomato sauce and topped with farm vegetables and italian herbs. The pizza is baked directly on the stone oven floor to develop its crisp, chewy crust and puffed edges. It is known for its large, wide, thin, and foldable yet crispy shape.
